Chicken Broccoli Casserole!


Mmmm…. comfort food at it’s finest! Can I get an Amen!?

Anywho, this is my moms recipe. Or I should say, was. I lost her back in 2005 to cancer. It took me YEARS before I could make this recipe again. This was my moms favorite to cook and she made it for every birthday I can remember. It means a great deal to me. I am so thankful she taught me this recipe when I was little. Here goes:

1 whole chicken boiled and deboned

1 cup sharp cheddar cheese (plus extra for the top!)

8 oz sour cream

1 can cream of chicken


1 or 2 Bags of Frozen broccoli (cooked)

Poultry seasoning

Salt and pepper

Now let me give you the directions. Pay close attention, it might seem confusing….

Mix all and cook on 375* for 45 minutes. There! =) And always always add extra cheese. That’s my new saying. So instead of the 1 cup of cheese, make sure you cover the top with cheese. You can also add some rice to this if you want. Just add some extra cream of chicken. I would use minute rice since it does not cook for that long. Honestly, 30 minutes will probably be enough time to warm it. All the ingredients are cooked already when going into the oven. So basically you wanna marry the ingredients and melt the cheese on top. You can use any cheese you want. =)
