Homemade Chocolate Pie!

Ok, first, let me tell you how amazing this pie is. It is one of the top 3 items my family and friends request at every get-together. I have mastered my skill with this pie and I must say, it does take a little practice to get the right consistency. There have been many time I have served this pie with a spoon instead of a fork. However, do not give up! Because even in a pudding form, it taste the same and it just amazing. That is the perfect part about this recipe; you can make pudding, or a pie. Technically the recipe makes two pies or one pudding and one pie. Take your pick. Just cook longer for the pie. Here goes:

2 Frozen Pie Shells, baked (or homemade, below)

2 Cups Sugar

4 Big Tbs Flour

½ tsp Salt

5 Big Tbs Cocoa Powder

3 Large Eggs, Yolk Only (Beaten)

4 Cups Milk

1 Stick Butter

2 Tsp Vanilla Extract

Combine Sugar, Flour, salt and cocoa in pot. Turn on medium to high heat. Then add beat yolks, then milk. Using a whisk, stir all together until warm. When warm, add whole stick of cold butter. Let butter melt while scrapping bottom of pot so it does not stick or clump. Continue stirring until it thickens to pudding texture, then continue for 8 more minutes or so. You will learn the consistency as you go. Add the vanilla extract and stir good. Pour into already cooked pie shells. Makes 2 pies. Or 1 pie + pudding.

I may have been a little impatient in tasting this one which is why it cracked on the top. No biggie! ALSO, one last thing, feel free to use the graham cracker crust or which ever pie shell you want. Trust me, its great in anything! Especially in my mouth!
