Quick and Yummy Chili Mac!


This is my children’s favorite throw-together meal! As a mom, I do not always have a lot of time for dinner some nights. Between kids, their homework, my homework (I am also a student), chores, a hubby, and about 100 other things, I am lucky if I fit sleep into my schedule. This meal feeds a lot of us. We are a family of four and always have left overs! You can cut this recipe in half if you want. Here goes:

2 lbs. lean hamburger

2 cans rotel (drained)

2 cans ranch style beans with jalapenos

2 boxes or kraft mac n cheese (trust me on this one, only kraft)

Brown your meat, drain the fat. Cook your mac n cheese like it says on the box. Combine the mac n cheese and hamburger in a large pot. Add the rotel, and the ranch beans. Season as wanted. (Doesn’t need much, maybe salt and pepper.) Mix it all together, on medium until warm and BAM, meal complete! How simple was that!? My kids like sour cream and shredded cheese on top. My husband like crumbled chips on top. Endless options. Even cornbread goes good with it! Of course I would think of cornbread, its my southern roots. 😉
