Oatmeal Pecan Chocolate Chunk Cookies!


4oz bittersweet chocolate bar chopped
1/2 cup chopped fresh pecans
1 1/4 cup regular flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp table salt
1 1/4 cup quick oats
1 3/4 sticks of cold butter
1 1/2 cup lightly packed brown sugar
1 large egg
1 tsp vanilla

350* oven
Bowl #1 :Whisk flour, bailing powder and soda and salt. Set aside.
Bowl #2: Stir together pecans oats and chocolate chunks
Bowl #3: Cream butter with brown sugar with a mixer. Then add the egg and vanilla and continue with mixer for 30 seconds or so. Then stir in flour mix with a wooden spoon til all mixed. Then add the oat mix.
Make 1 1/2 inch balls and slightly flatten in in the pan to about 3/4 inch thick balls. Make sure u use wax paper on your pan. I baked them for 7 minutes then rotate the pan around and bake another 4 minutes. It actually helps. They won’t be brown but should be done. Cool for 7 or 8 minutes before removing them. That way they stay in one piece.


Nutella Cheesecake!


This one is thick and creamy and fantastic!!!

1 and 1/2 Cups Nutella

2 – 8oz tubs of cream cheese

a pinch of salt

1/4 cup white sugar

2 tsp. Vanilla

You can use a frozen pie shell, a shortbread crust or the oreo crust. Which ever you prefer!

Mix with a mixer, trust me it’s thick!

Refrigerate for a few hours to set and then make sure u keep it covered and in the frig after u grab a bite!

As you can see from the picture, I added the dark chocolate shavings to the top too! It balances out the two chocolates!


Also I wanted to add another variation of this. I simply added 8 oz of cool whip, folding it in the already mixed filling and it turned it into a mousse type Pie which was fabulous and it also made two pies instead of one. So there is that also! 🙂

Lemon Garlic Thyme Chicken!


This was a huge hit at my house last night! It even made some awesome left over for lunch today! I will tell you all about that later! Here goes:

1/4 olive oil

3 tbs mined garlic

2 cups chicken broth

1 tbs lemon zest

2 tbs lemon juice

1 tsp dried oregano

1 tsp dried thyme

salt and pepper

6 medium size chicken breast

1 whole lemon

1 tbs vinegar

Preheat the oven to 400*

Mix together the broth, garlic, vinegar, all seasonings, lemon zest, lemon juice and olive oil. Combine with a whisk and let sit for about 5 minutes while you prep the chicken.


Spray your pan with non stick spray and lay your chicken breast in the pan. Add the lemon (sliced) around the chicken. Next, simply pour the liquid mix on top.


I added pepper to the top of my chicken to give it more color. Bake at 400* for about 40-45 minutes depending on your stove (uncovered). The internal temp should read at least 165* when the chicken is done cooking.


You can also turn the broiler on for a few minutes and let it brown the tops of the chicken breast. Allow the chicken to rest for a bit before you serve it so it can soak up the juices. I made wild rice to go with the chicken and let me tell you, the juice from the chicken, poured over rice, was simply amazing! Here is another pic. =)


Goes wonderful with a side salad, fresh green beans or asparagus! (not pictured) Also, For lunch today I used the left over chicken breast I had, some of the left over juices and a freshly cut tomato and sauteed together until the liquid was gone.


Then I tossed it on a tortilla with some cheese and made some KILLER quesadillas! I mean, this was the best quesadillas I have ever made!!!



Sausage Cinnamon Grilled Cheese French Toast!


Yes I said it, sausage cinnamon Grilled Cheese french toast. Oh my goodness! Simply amazing. A staple in our house for Sunday morning breakfast. We have even had it for supper a time or two! Here goes:

Bread (white or wheat works)

2-4 eggs (beaten)

A few dash of milk


Few tbs of brown sugar

1 tsp of vanilla extract



Shredded cheese

Ok, so first you cook your sausage until its brown, drain it. Then add a little bit of syrup the the sausage and mix it and let it sit. While that is sitting, beat your eggs in a shallow bowl. Add the brown sugar, cinnamon, vanilla and milk. Mix with a whisk. Get your pan nice and hot. Add some non stick spray. First, your basically making french toast. You dip the bread in the egg mixture on ONE SIDE ONLY. Fry that in the pan. Take it out and fry another piece one side only.

To put together the sandwich, you will take one piece of bread, lay it cooked side UP, add your cheese, sausage and a little more cheese. Top it with the other bread cooked side DOWN. So with your finished product, it shows a sandwich made with uncooked bread on the outsides. (I will take pictures when I make this again. That way you can follow the steps if needed. It is more simple than it sounds.) Dip the sandwich into the egg mixture again, then flip it over. Add to the hot pan and continue to fry the sandwich just like a regular grilled cheese on both sides.

Once done, add syrup over the top and serve warm. Its super yummy! More pictures coming asap!
