This was a huge hit at my house last night! It even made some awesome left over for lunch today! I will tell you all about that later! Here goes:
1/4 olive oil
3 tbs mined garlic
2 cups chicken broth
1 tbs lemon zest
2 tbs lemon juice
1 tsp dried oregano
1 tsp dried thyme
salt and pepper
6 medium size chicken breast
1 whole lemon
1 tbs vinegar
Preheat the oven to 400*
Mix together the broth, garlic, vinegar, all seasonings, lemon zest, lemon juice and olive oil. Combine with a whisk and let sit for about 5 minutes while you prep the chicken.
Spray your pan with non stick spray and lay your chicken breast in the pan. Add the lemon (sliced) around the chicken. Next, simply pour the liquid mix on top.
I added pepper to the top of my chicken to give it more color. Bake at 400* for about 40-45 minutes depending on your stove (uncovered). The internal temp should read at least 165* when the chicken is done cooking.
You can also turn the broiler on for a few minutes and let it brown the tops of the chicken breast. Allow the chicken to rest for a bit before you serve it so it can soak up the juices. I made wild rice to go with the chicken and let me tell you, the juice from the chicken, poured over rice, was simply amazing! Here is another pic. =)
Goes wonderful with a side salad, fresh green beans or asparagus! (not pictured) Also, For lunch today I used the left over chicken breast I had, some of the left over juices and a freshly cut tomato and sauteed together until the liquid was gone.
Then I tossed it on a tortilla with some cheese and made some KILLER quesadillas! I mean, this was the best quesadillas I have ever made!!!
