Oatmeal Pecan Chocolate Chunk Cookies!


4oz bittersweet chocolate bar chopped
1/2 cup chopped fresh pecans
1 1/4 cup regular flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp table salt
1 1/4 cup quick oats
1 3/4 sticks of cold butter
1 1/2 cup lightly packed brown sugar
1 large egg
1 tsp vanilla

350* oven
Bowl #1 :Whisk flour, bailing powder and soda and salt. Set aside.
Bowl #2: Stir together pecans oats and chocolate chunks
Bowl #3: Cream butter with brown sugar with a mixer. Then add the egg and vanilla and continue with mixer for 30 seconds or so. Then stir in flour mix with a wooden spoon til all mixed. Then add the oat mix.
Make 1 1/2 inch balls and slightly flatten in in the pan to about 3/4 inch thick balls. Make sure u use wax paper on your pan. I baked them for 7 minutes then rotate the pan around and bake another 4 minutes. It actually helps. They won’t be brown but should be done. Cool for 7 or 8 minutes before removing them. That way they stay in one piece.
