Buttercream Icing

1/2 cup solid shortening

1 stick butter, softened

1 tsp vanilla (clear if possible)

4 cups confectioners sugar (about 1 lb)

2 tbs milk

Cream shortening and butter with electric mixer. Add the vanilla. Gradually add the sugar, one cup at a time while beating well. When the sugar has been mixed in, the icing will appear to be dry. Add the milk and keep beating with the mixer until light and fluffy. If you need more milk, add tiny drops at a time until you reach desired consistency.

PB filled Chocolate Cupcakes

This is another quick recipe I had to make for a party at the school for my children. They were a huge hit and everyone was quite surprised when I told them it was not all homemade.

Here is what you need:

Chocolate cake box mix, any brand will work, we use the devils food chocolate mix

(If you wanna make homemade chocolate cupcakes, perfectly fine too!)

Creamy peanut butter

cream cheese frosting in a can

Homemade Buttercream icing

First, just bake the cup cakes like it says on the box. My husband prefers the devils food chocolate. Let the cupcakes cool. Then take a small spoon or knife and cut out the center of each one. (keep the extras) Just a little in the middle. Warm the cream cheese frosting in the can for 30 seconds in the microwave. Then pour it in a bowl. Melt some peanut butter in the microwave as well. Mix the peanut butter and the frosting together. If it gets thick, you may need to re-melt it a little so you can pour/spoon some into each cupcake. Let the cupcakes sit so the filling will harden a bit. Make your homemade buttercream icing while you wait. The recipe link is above.

Remember those little extras from the center of the cupcake?! We are gonna use those to cover the filling back up a little. Just press some of the cupcake extra into the hole. That way the frosting wont sink in.

I obviously used a pipping bag for the icing in the picture. If you don’t have one or don’t want to use one, no big deal. Just spread the homemade icing on top of the cupcakes. For the PB drizzle, super simple… just melt PB and drizzle it. You could even use the left over PB and frosting filling if you have any left.

I topped mine with some chopped Reese’s PB cups too. 😉

Apple Danish

Super easy to make and a great hit for breakfast or snack.

2 tubes of crescent rolls

1 can apple pie filling, or any other pie filling you want.

2 tbs melted butter

cinnamon and sugar

For the glaze:

1/2 cup powdered sugar

1 tsp vanilla

4 tsp milk

Preheat oven to 350*

Open the crescent rolls and pull apart to make 8 triangles Sprinkle some cinnamon and sugar on each one.  Place in a muffin tin with the sides hanging over. Add a spoon of apple pie filling the close the sides over. Does not have to cover the entire top. See picture above. Bake until the tops are golden.

Mix the glaze with a whisk and pour over the top of the danishes. Make sure they are cool, and not hot.

Banana Bread

  

 

2 cups all purpose flour

1 tsp baking soda

1/4 tsp salt

2 tbs white sugar

1 tsp vanilla

1 tsp cinnamon, more if wanted 

1/2 cup butter, softened

3/4 cup packed brown sugar

2 eggs, beaten

2.5 cups mashed overripe bananas (I use 3 medium bananas

Heat your oven to 350* and grease a loaf pan or small casserole dish

In a large bowl, mix the flour, baking soda, white sugar, cinnamon and salt. In another bowl cream together the butter and brown sugar with a mixer. STIR in the eggs, vanilla and mashed bananas and mix well. Then STIR in the banana mixture into the flour, just until moist. Don’t over stir! Pour into the loaf pan/casserole dish and bake for about 30 minutes and then start checking. Use a toothpick to check the center of the bread. Cook 5 more minutes and check again. Don’t let it over cook or it will be dry. Let it cool for 15 minutes before you take it from the pan. A loaf pan will take longer than the casserole pan I used. 

  

For a glaze, if you want, add some confectioners sugar and milk and whisk together. You can add a dash of banana flavoring or cinnamon if you want. Make sure the bread is completely cool before you add the glaze.

Chocolate Chip Cupcakes

This is not exactly a real homemade recipe because one day I needed something quick and fast to make for a party at my sons school. This is what I came up with.

I used two packages of Betty Crocker Chocolate chip muffin mix

Use milk instead of the water

Sprinkled some brown sugar, just a bit

and add about 1/2 cup chocolate chips

For the frosting I did make it homemade

Frosting

6 tbs softened stick butter

2 & 2/3 cup confectioners sugar

1/2 cup cocoa

1/3 cup milk

1.5 tsp vanilla

Cream the butter in a bowl, add the sugar and cocoa and mix well. Stir in the milk slowly, stirring after each bit you add. Last, add the vanilla and mix well. Frost the cupcakes and let them sit opened for about 30 minutes so the frosting hardens.

Note: Before you eat the cupcake, warm it in the microwave for about 8-10 seconds. This warms the chocolate chips and melts it good. The frosting is great with cakes and other cupcakes as well.

Makes 12 cupcakes!

Creamed Spinach

3 pounds spinach

2 tbs unsalted butter

2 tbs olive oil

2 cloves of garlic, chopped

3/4 cup heavy cream

1/4 cup grated parm

salt and pepper

nature seasoning

Wash the spinach. Heat the butter and oil in a skillet (I like to use a pot for this part). Add the spinach and garlic. Stirring constantly, cook until the spinach is wilted. Put in a strainer and press all the liquid out of it. It needs to be squeezed good. Chop it up if you want smaller bites also. Then heat the skillet again, add the cream and cook for about 5 minutes and let it reduce a little. add the parm cheese and then the spinach and seasonings. Warm about another 5 minutes.

This goes GREAT with turkey and dressing by the way. 😉

McDonald’s Big Mac Sauce

  

This is a copycat recipe of the big mac sauce from McDonald’s. Trust me, it is pretty spot on! Goes great on hamburgers or a dip for fries!

1 cup miracle whip dressing

1/3 cup sweet relish (must use sweet)

1/4 french dressing (no substitutions)

1 tbs sugar

1/4 tsp black pepper

1 tsp minced dry onion

Mix it all together, put in fridge and let it sit for hours. Best to make it the day before so the onions have time to re hydrate and the flavors all marry.

Also I wanted to include the directions on putting together a big mac.

Yeast Rolls (No knead)

2 pkg active dry yeast

2 cup warm water

1/2 cup sigar

2 tsp salt

6.5 cups flour

1 egg

1/4 cup soft shortening

Dissolve the yeast in the warm water. Add the sugar, salt and half of the flour. Beat for 2 minutes. Then add the egg and shortening. Gradually beat in remaining flour until smooth. Cover with a slightly damp cloth and put in the frig for 2 hours. Pull out after two hours and shape into rolls. Place them on a greased baking sheet and let rise in a dry area for 2 hours again. (I like to use the inside of my oven to let rise, as long as the oven is cool) Then heat the oven to 400* and bake 15-20 minutes. Rub the tops with butter and garlic if wanted.

KFC Slaw

This recipe taste just like the cole slaw you get from KFC!

Dressing

1/2 cup mayo

1/3 cup sugar

1/4 cup milk

1/4 cup buttermilk

2.5 tsp lemon juice

1.5 tsp white vinegar

1/2 tsp salt

1/8 tsp pepper

Now this is where you can either buy the cole slaw mix in a bag, or you can make your own. (I actually prefer the bag of fresh slaw)

Here is the slaw recipe:

1 head of cabbage

1 medium carrot, grated

2 tbs minced onion

Combine the dressing in a bowl and whisk well. Cover and refrigerate for hours. (or overnight works better)

Makes a lot, serves 10-12 people normally.

Mayo

A dash of hot sauce, optional

Salt and pepper
Toasting the bread is optional. I prefer it lightly toasted with no color on it. It works better to hold in the juices so it doesn’t turn the bread soggy so fast. Mayo both slices, add the lettuce, bacon, tomato. Lightly salt and pepper the tomato. Then add the sliced avocado and top with a fried egg. (Runny or not, it’s amazing!)
